basil pesto pasta

My kitty cat loves basil! He keeps eating the basil leaves! As it got a bit cold I put my basils inside the house but I am afraid they will have the same luck as if they were outside in the cold. I usually make pesto sauce when the weather is hot. I like pesto almost on everything! pasta, pizza, salads, quinoa etc.

Basil is one of my favorite herbs. It is really the king in my kitchen. Did you know that its name comes from the Greek word “Βασιλεύς” (βασιλιάς) which means “King”? Isn’t it annoying that most of the pesto sauce jars contain parmesan cheese? The good thing of having quite a few pots with basil plants is that I can make my own pesto whenever I feel like it, like for example today that I was craving pasta with pesto sauce. I used whole wheat penne rigate and the following basil pesto sauce.

3 cloves garlic
2 cups fresh basil leaves
1/3 cup pine nuts
1/2 ts salt
freshly ground pepper
1/3 cup extra virgin olive oil
2-3 TB water
2 TS nutritional yeast flakes

Add the garlic, basil leaves, pine nuts, nutritional yeast, salt and pepper in the food processor and the 1/3 of the olive oil. Start blending. After few seconds stop, scrape down the sides and add another 1/3 of the olive oil. Continue mixing for few more seconds, scrape the sides again and add the rest of the olive oil. If it’s too thick add 2-3 TB of water or more olive oil and process for few more seconds. Pour over the pasta and enjoy a quick, easy and superhealthy dish!
