Vegan MoFo Day 12: Artichoke Hearts with Peas

This is a very popular dish here in Greece when artichokes and peas are in season but you it works great with frozen vegetables as well. It’s very easy to make as it’s ready in under 30 minutes. You can add some lemon juice when you turn the heat off if you like or a couple of Tbsp of tomato sauce while cooking.

500 gr/1 pound frozen peas
8-10 artichoke hearts
2 carrots sliced
1 medium onion, chopped
1/4 cup chopped dill
1/4 cup olive oil
1 garlic clove, minced
1 1/2 cup vegetable broth
salt and pepper to taste

Heat the olive oil in a big pot over medium heat. Saute the onion and garlic for 2 minutes. Add the peas, carrots and artichokes and saute for 5 minutes. Add the dill and vegetable broth and bring to a boil. Lower the heat and let it simmer for 20-30 minutes until peas are cooked and artichokes softens. Season with salt and pepper. Serve and enjoy!
