Vegan MoFo Day 13: Tofu and Veggies in coconut sauce

Have you ever made your own tofu? Homemade Tofu is so much better than the prepackaged one. It does take time but it totally worth it. I made my own tofu using this recipe. I usually make my own tofu once a month. It costs much less too, as with 1 euro worth of soy beans I get about 650 grams of tofu.

For this recipe I used the 1/3 of my homemade tofu (1 1/2 cup cubed tofu), frozen veggies and coconut milk. Had it ready in under 20 minutes. What can I say? I love making quick food.

Ingredients

1 1/2 cup cubed tofu
1 cup frozen string beans
1 cup bell peppers, sliced
2 cups broccoli florets
1 small onion sliced
1/2 cup light coconut milk
2 Tbsp coconut oil
1/2 tsp turmeric
1/2 tsp curry powder
1 Tbsp tamari
few drops liquid smoke
salt and pepper to taste

Marinate the tofu in the coconut oil, tamari and liquid smoke for at least half an hour. Transfer to a pan over medium heat and saute until golden. Add all the vegetables and saute for 5 minutes. Add the coconut milk, turmeric and curry, bring to a boil, lower the heat and let it simmer for 15 minutes. Season with salt and pepper and serve over a bed of brown rice.

  2. Woah, you made your own tofu?! That’s hardcore! I had fresh tofu at a Japanese restaurant last week and it was amazing. It was served in a little cup, with soy sauce and green onions and I ate it with a spoon like pudding. It was so creamy and amazing!
