This decadent chocolate peanut butter pudding comes together in about 5 minutes! Truth is I am not much of a chocolate girl but when peanut butter comes into the game I am totally sold. Dark, sweet, and luscious with a hint of contrasting saltiness, super tasty and kinda healthy! This has been my all time favorite dessert ❤

breakfast: vanilla coffee pudding

Like most people, I usually start my day with a cup of coffee. And something quick for breakfast. {And a big big green smoothie. } And as the carnation instant breakfast is not good for me (I am sorry but I’ve been watching way too many old commercials on youtube lately) I came up with this quick and delicious tofu vanilla coffee pudding – for breakfast. Who needs a cup of coffee anyway? I do. And a spoon.

vanilla coffee pudding

Ingredients

1 box firm silken tofu
1 1/2 ts vanilla extract
1 TS agave nectar
1 ts instant coffee
cocoa powder to garnish

Blend the tofu, vanilla extract and agave nectar in a food processor.  Take 3 TS of the mixture, place it in a small bowl, add the instant coffee and mix well.  Pour some of the vanilla mixture into a small serving bowl, add 1 TS of the coffee mixture and continue filling the bowl with the vanilla mixture. Dust the top with cocoa powder. Recipe makes 3 servings. Enjoy!
